Servings: 4 – Preparation: 15 minutes – Cooking: 25 minutes
Ingredients
- 3 boneless chicken breasts, cut into strips
- 60 ml (4 tablespoons) olive oil
- 30 ml (2 tablespoons) red curry paste
- 250 ml (1 cup) red bell pepper, in strips
- 250 ml (1 cup) green pepper, in strips
- 250 ml (1 cup) red onion, minced
- 30 ml (2 tablespoons) honey
- 45 ml (3 tablespoons) ginger, chopped
- 3 cloves garlic, grated
- 250 ml (1 cup) pineapple, cut into cubes
- 500 ml (2 cups) cherry tomatoes
- 500 ml (2 cups) chicken broth
- 500 ml (2 cups) coconut milk
- 2 lime, juice
- 60 ml (4 tablespoons) Thai basil leaves, chopped
- 60 ml (4 tablespoons) coriander leaves, chopped
- Salt and pepper to taste
- 4 servings of cooked jasmine rice
Preparation
STEP 1
In a hot pan fry the chicken strips in a little oil, 3 to 4 minutes.
STEP 2
Add the curry paste and mix.

Add the peppers, onion and continue cooking for 3 minutes.
STEP 4
Add honey, ginger, garlic, pineapple cubes, cherry tomatoes, meat broth, coconut milk, lemon juice and simmer for 15 minutes.

Sprinkle with basil, coriander and serve with rice.
