Servings: 4 – Preparation: 15 minutes – Cooking: 25 minutes

Ingredients

  • 3 boneless chicken breasts, cut into strips
  • 60 ml (4 tablespoons) olive oil
  • 30 ml (2 tablespoons) red curry paste
  • 250 ml (1 cup) red bell pepper, in strips
  • 250 ml (1 cup) green pepper, in strips
  • 250 ml (1 cup) red onion, minced
  • 30 ml (2 tablespoons) honey
  • 45 ml (3 tablespoons) ginger, chopped
  • 3 cloves garlic, grated
  • 250 ml (1 cup) pineapple, cut into cubes
  • 500 ml (2 cups) cherry tomatoes
  • 500 ml (2 cups) chicken broth
  • 500 ml (2 cups) coconut milk
  • 2 lime, juice
  • 60 ml (4 tablespoons) Thai basil leaves, chopped
  • 60 ml (4 tablespoons) coriander leaves, chopped
  • Salt and pepper to taste
  • 4 servings of cooked jasmine rice

Preparation

STEP 1

In a hot pan fry the chicken strips in a little oil, 3 to 4 minutes.

STEP 2

Add the curry paste and mix.

Add the peppers, onion and continue cooking for 3 minutes.

STEP 4

Add honey, ginger, garlic, pineapple cubes, cherry tomatoes, meat broth, coconut milk, lemon juice and simmer for 15 minutes.

Sprinkle with basil, coriander and serve with rice.
