A beginner on the Cocotte menu this Monday

Ingredients (for 6 people)

6 small tortillas or 6 small m’semen (oriental pancakes with puffs that can be found frozen)

1.5 kg of chopped beans

fresh thyme

1 branch of fresh mint

200 gr ricotta

olive oil

1 small saucepan with scrambled eggs

1 lemon

some green salad leaves

1 red onion




Peel a squash, grate it and squeeze the juice.

Boil them for 6 to 7 minutes in a broth with salt and pepper with thyme and mint.

Drain and mix with the ricotta, squeezed lemon juice, fish eggs and a little olive oil. Add salt and pepper.

Heat the tortilla petals or m’semen again.

Wash the lettuce leaves, cut into strips.

Peel a squash, grate it and slice it into thin rings.

Spread lettuce leaves, beans mixed with ricotta and onion rings.


Add a little olive oil and roll the pancakes to taste.
