The recipe for the perfect roast chicken

Here is Ina Garten’s recipe (can be found on her website):

1 roasted chicken; kosher salt

Freshly ground black pepper

1 large bunch of fresh thyme

1 lemon halved

1 head of garlic, halved in width

2 tablespoons melted butter

1 Spanish onion, cut into slices

1 cup chicken broth, preferably homemade

2 tablespoons flour

Once you have removed the needles, rinse them in and out and then remove the excess fat. Salt and pepper generously the inside of the chicken before filling it with the bouquet of thyme, two halves of lemon and garlic. Coat the outside of the chicken with butter and sprinkle with salt and pepper, then sprinkle the chicken with onion slices. Cook for 1:30 until the liquid comes out clean. Remove the pan and cover with aluminum foil while preparing the sauce. Remove the fat and reserve 2 tablespoons in a small cup. Add the chicken broth to the pan and cook over high heat for about 5 minutes, until reduced. Mix 2 tablespoons of chicken fat with the flour and simmer for a few minutes. Drain the sauce into a small saucepan and set to taste. Keep warm and serve with chicken.
