Sweet Potato Cake Recipe
- 500 g of sweet potatoes
- 30 ml neutral oil
- 30 ml rum
- 1 C. vanilla extract
- 3 egg yolks
- 90 g sugar
- 1 packet of vanilla sugar
- 100 gr flour
- chocolate coulis
Peel a squash, grate it and steam or steam the sweet potatoes. Once they are boiled, reduce them to a thin puree.
Add the oil, rum and vanilla extract and mix well. Add the egg yolks one by one, mixing them between each addition.
Add the sugar, vanilla sugar and flour and mix until the preparation is homogeneous.
Pour the dough into a greased cake tin and bake for 35 to 40 minutes at 200 ° C. Check readiness with a knife.
